Inspector Comments Meat slicer was observed to have dried food debris on it. Food debris can serve as a growth medium for bacteria. Operator agreed to have meat slicer thoroughly cleaned and sanitized prior to use and within 10 days.
Inspector Comments Cook was observed to crack a shell egg onto grill, remove gloves and then proceed to put on new gloves (in preparation for handling ready to eat toast) without first washing his hands. Washing hands prior to donning new gloves helps prevent cross contamination from raw egg that hands may have come in contact with during dirty glove removal. Cook agreed to wash his hands after removing gloves and prior to donning new gloves when switching tasks. Operator agreed to review appropriate times to wash hands with staff.
Inspector Comments Potentially hazardous foods were observed to be cold holding at temperatures above 41F in the top prep table unit and salad bar. Operator voluntarily discarded deli meats and salad bar items. Operator agreed to have salad bar unit serviced within 10 days and use ice to ensure potentially hazardous foods are held at internal temperatures of 41F until repaired. Operator also agreed to begin storing deli meats and other potentially hazardous items in lower prep table cooler which is holding good temperatures.
