Inspector Comments | I observed and tested a cloth bucket with quat-based sanitizer in it used for wiping down the sandwich prep area cutting board. The sanitizer solution read on a test strip at over 500ppm. The instructions on the chemical bottle stated food contact surfaces should be sanitized between 150ppm to 400ppm. Having too much sanitizer solution can become toxic possibly causing illness or injury to customers. The operator corrected this immediately by adding more water to the sanitizer bucket so it read on a test strip at 400ppm. The cutting board was then properly washed, rinsed, sanitized. |
