| Inspector Comments | The mechanical warewashing machine had a dish temperature of 140F. The final rinse temperature reached 150F. Inadequate temperatures of below 160F dish temp or 180F final rinse will not sanitize food contact surfaces, which allows microbiological growth. Staff agreed to re-sanitize all washed dishes using quaternary ammonia in the 3 compartment sink. Staff notified company to service as well. |
