Inspector Comments I observed that the main refrigerator was running warm with an ambient temperature of 49F. The owner stated that they constantly open and close the refrigerator door during their lunch rushes. I was able to verify this during the time of the inspection. I explained that potentially hazardous foods must be cold held at 41F or below to protect against bacteria growth. The owner immediately adjusted the temperature of the refrigerator and I was able to verify the temperature dropping 2 degrees F within 5 minutes. The owner stated they will look into replacing this refrigerator as soon as possible.
Inspector Comments I observed that the cutting board on the deli prep table is used to cut and prep cooked meats. The owner stated that they clean the cutting board at the end of the day with only soap and water. I explained it is important the cutting board get cleaned and sanitized every 4 hours. We discussed the cleaning and sanitizing process must entail washing, rinsing, and then sanitizing. The owner immediately removed the cutting board and placed it in the 3 compartment sink. We then discussed how to properly set up the 3 compartment sink to wash, rinse and sanitize in that order. I will send cleaning and sanitizing guidance to the operator.
Inspector Comments I saw that the operators had drinking water vases resting in the handwashing sink. I explained to the owner that this makes the sink inaccessible and can discourage kitchen staff from washing there hands. This will increase the risk of hands not getting properly washed and possible cross contamination. The owner immediately removed the the drinking water vases and placed them in the 3 compartment sink. The owner stated they will train staff to use the sink for handwashing only.
