I observed the hot water sanitizing dish machine reached a temperature of 154F after running it three times. Food that comes into contact with surfaces that are not properly cleaned and sanitized are liable to contamination. I discussed my observations with the Person In Charge (PIC) who agreed to contact the company who services the unit. In the meantime, utensils will need to be sanitized in the 3-compartment sink. Please email erica.aus@alaska.gov by 6/10/2022 to confirm the unit is reaching the necessary temperature of 160F. |

The small prep area refrigerator was not holding the required 41 degree temperature. Food was observed cold holding at temperatures above 41F. The rate of bacterial growth and possible toxin production can be greatly reduced when foods are held at temperatures of less than 41F. The Gyro's and Polenta were voluntarily discarded by staff at time of inspection and the cooler items were removed and placed in a refrigerator that was cooling properly. The person in charge will contact the repair company to look over the refrigerator. |

Observed employee washing dishes with bleach concentration under 50 ppm. Pathogens can be transferred to food from utensils that have been stored on surfaces which have not been properly cleaned and sanitized (50-100ppm chlorine). The employee immediately added more bleach to the sanitizing solution in the three compartment sink and was reminded to check the bleach water with the testing strips each time they refill or replace the saniziting solution. |
