The Manager's Certified Food Protection Manager (CFPM) had expired. A CFPM establishes policies and procedures and trains staff on ways to prevent foodborne illnesses. Pesto, in the countertop prep line in the pizza area, was observed above 41F. The bottom of the container was observed at 41F, but the top of the container was observed at 50F. Employee immediately discarded the pesto and filled another container half full. She will make sure all employees know to keep containers half full. The temperature on the unit will be turned down. Cut leafy greens in the back prep line was observed above 41F. The containers were kept on ice, and the bottom was 41F or below, but the top was above 41F. Manager emptied the container and will have staff keep them at half full. The temperature on this unit will also be adjusted. I discussed with staff, that if they are using ice to help keep food below 41F, they need to completely surround the container to ensure all of the food in the container is below 41F. Additionally, it was noted that some food items were stored in stacks of containers. It was discussed that this practice will insulate the food and make it harder for the ice to keep the food below 41F. Additionally, cut greens, such as fresh basil should also be kept under refrigeration. It was noted on the previous inspection that this facility had temperatures above 41F observed. Due to this being a repeat violation, staff will keep daily temperature logs of the coolers. Please take internal temperatures of multiple food items in each cooler twice a day and mark the temperature on the log. If the temperature is observed to be above 41F, please make a not of what was done with the food to correct the temperature. Please email the logs to heidi.isernhagen@alaska.gov at the end of each week until it can be determined that the equipment is able to keep food below 41F. |

Environmental Health Officers observed shredded cooked chicken in cold holding unit under the grill to be at 45.5F. EHO also observed seasoned chicken in the salad prep area to be at 44.1F. Potentially hazardous foods held at 41F or below inhibits bacteria and pathogen growth. Person-In-Charge (PIC) discarded the chicken. PIC will move the chicken tray toward the back to allow more cold air flow, lessen the amount of chicken in the containers, and monitor the temperatures of the food items. |
