A consumer advisory consists of 1) a disclosure and 2) a reminder placed on the selection information that consumers read to make their order selections. The PIC agreed to include the consumer advisory disclosure to indicate which foods the consumer advisory pertains to for consumers' knowledge. |
| Inspector Comments | Raw shell eggs were stored above ready to eat (RTE) foods including roast beef and noodles. Salmonella enteritidis may be inside perfectly normal-appearing eggs and can cause serious illness if the eggs break or crack and drip on RTE foods. The PIC immediately moved the eggs to the bottom shelf. The PIC will train all food employees on proper food storage and protection to prevent potential cross contamination. |
| Inspector Comments | A container of raw egg mixture was left at room temperature for over four hours.When a food is moved from refrigeration to room temperature, Listeria monocytogenes is a primary organism of concern. The PIC discarded this container of egg mixture. When time is used as a public health control the operator must develop, maintain, and make available to the department on request, written standard operating procedures in the food establishment that explains how the operator will comply with the requirements. I discussed how to create a operating procedures for using time as a control. The PIC will label the time that the food item must be discarded after being stored at room temperature for four hours. |
| Inspector Comments | Food items were observed to be stored in plastic grocery bags including cooked udon noodles, cooked teriyaki chicken, and cooked battered chicken. Plastic grocery bags are not an approved food contact surface. The PIC moved these food items into hotel pans and will ensure that foods are stored in containers designed and meant for food contact and storage. Ziploc bags were also used to store food and are an acceptable food storage method. |
| Inspector Comments | A spray bottle used for degreaser was not labeled to properly identify the contents. The accidental contamination of food or food-contact surfaces can cause serious illness and the identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents. The PIC immediately labeled the bottle to identify the contents and will ensure that all containers are properly labeled to identify the contents to prevent possible misuse and contamination. |
