Inspector Comments | Four bottles were found with chemical substances in them and no label. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents. The PIC immediately labeled the bottle and will remind staff to do so from here on out. |
Inspector Comments | The high temperature dish machine is not reaching a final rinse of 160F or higher for sanitizing dishes. 142F was observed as the final rinse temperatures. 160F or higher must be met in order to ensure food contact surface are properly sanitized. The person in charge (PIC) has implemented a sanitizing dip for the final step in order to make sure they are being sanitized until the unit is fixed. |
Inspector Comments | Four dirty knives found on the magnetic strip with the clean knifes. Pathogens can be transferred to food from utensils that have been stored on surfaces which have not been properly cleaned and sanitized. The person in charge (PIC) took the dirty knives off the strip to be washed and was reminded that only clean knives should placed on this magnetic strip. |
