Multiple items were above 41F in the unit and the ambient temperature of the unit was 48-50F. Any PHF products that had not been out of temperature for 4 hours or more were moved to the walk in today. The unit needs to be adjusted or fixed /repaired as a long term solution. Cold holding at or below 41F ensures bacterial growth is reduced.

Inspector Comments Lettuce in the prep cooler was observed at 50F and sliced tomatoes in the prep cooler were observed at 45F. The ambient temperature below was 44F. It is important to cold hold potentially hazardous foods 41F or below to prevent the growth of harmful bacteria. The person in charge explained that tomatoes and lettuce had only been in the prep cooler for an hour. The person in charge turned down the cooler temperature. When rechecked after 30 minutes, the ambient temperature was 41F. The lettuce had cooled down to 47F. The tomatoes were 47F, two degrees higher than before. The person in charge moved the tomatoes to the walk in cooler to cool down. They agreed to monitor the prep cooler temperature to ensure that it holds foods at 41F or below.
Inspector Comments Some of the copies of food workers cards were expired. It is important to have up-to-date food workers cards to ensure good food safety practices are being followed.
