Inspector Comments A consumer advisory has both an asterisk and language used to identify the food item that may be served raw or undercooked and a disclosure footnote, with the same symbol, identifying the risks. The eggs, steak and hamburger were not identified with an asterisk or included "cooked to order" on the menu. This informs the consumer that the food may contain raw or undercooked ingredients by request. As this increases the risk of foodborne illnesses, consumers are to be made aware if they request it. The waitresses will inform customers of the risk when ordering raw or undercooked foods and the owner will update the electronic copy of the menu by May 2, 2022. Please email a copy or image of the updated menu to Becky.Fletcher@alaska.gov.
Inspector Comments I observed a staff member leave the kitchen for outside, coming back to the kitchen and putting gloves on to prepare foods without washing hands. Staff also washed their hands for about 5 seconds when reminded. Improper handwashing, or lack thereof, is responsible for at least 40% of foodborne illnesses. Hands are to be lathered with soap and vigorously rubbed together for at least 20 seconds to effectively remove bacteria and virus contamination. Afterwards, I observed staff properly washing their hands and gave a "wash your hands" sticker to remind them when to do so.
Inspector Comments There is no Certified Food Protection Manager on staff. A CFPM establishes policies and procedures, and trains staff, on methodologies to prevent foodborne illnesses. Please visit the FSS webpage at: http://www.dec.alaska.gov/eh/fss/CFPM_training.html to obtain information on training and trainers throughout the state. There is an in person course offered in June that staff will be attending. Please submit a copy of the certificate to Becky.Fletcher@alaska.gov.
Inspector Comments I observed a purple solution in a container with the handwritten label "water". Correct labeling supports proper use of poisonous and toxic chemicals. The owner relabeled the container with "Fabulous Cleaner" and trained staff to label containers correctly.
