Observed the dishwasher was unable to reach a finale rinse dish surface temperature of 160F. The Bakery Manager was aware that the final rinse temperature of the dishwasher should reach at least 180F to allow the dish surface temperature to reach 160F. If the surface temperature does not reach at least 160F germs still may exist on the dishware and cause illness. The Store Manager instructed bakery staff to wash, rinse, and sanitize dishware in the 3-compartment sink until the dishwasher can be repaired. |

Observed fried chicken on a stick that had an internal temperature of 125F. The chicken was reported to be cooked at 165F and placed in the hot hold case 30 minutes from time temperature was taken. Potentially hazardous foods must be hot held at a temperature of 135F for 4-hours or longer to prevent bacteria growth. The manager stated they will incorporate temperature logs to track temperature of PHF's for the future. They have marked the time from when the chicken was cooked as well as the 4-hour mark when to discard the food. The chicken on the sticks will be discarded with in 2-hours from the time of this inspection. |

Observed a bottle of bleach and an empty spray bottle resting in the hand wash sink basin. The container of bleach can cause back splash as staff wash their hands and may lead to hands being contaminated with bleach. Item stored in the hand washing sink can deter staff from properly washing hands when needed. The manager is aware of this and immediately removed the items from the sink. The manager trained staff on site to not store any items in the hand wash sink basin. |
