Observed shrimp andouille soup hot holding at the self service aisle near the front cashier register. Time temperature taken 09:45 AM Shrimp soup was 147F. The soup is being hot held correctly, however the deli manager stated they take the soup out of the box frozen and set the soup in the hot hold container, let it thaw, and come to temperature. They explained this starts at 6:00 AM. Potentially hazardous foods must be reheated to 165F with in 2-hours to be hot held. The deli manager stated they will reheat soups in the deli kitchen area to temperature then transfer foods to the the hot holding line. The soup was discarded because it was unknown if the soup ever reached 165F or not. |

Observed Barley Soup with an internal temperature of 120F and Chicken Noodle Soup with an internal temperature of 128F. Time temperature taken 1045 AM. The soups were in hot hold steam containers since 0630 AM. Observed there was not any water inside to the steam tables to help conduct heat. The manager voluntarily discarded the soup and trained staff to make sure water is added to the hot holding steam table prior to holding soup. Observed hot holding case with pesto pasta with an internal temperature of 115F. The pasta dishes had been placed in the hot holding case for 35 Minutes. Observed the hot case to have an ambient temperature of 96F. The deli manager was aware that potentially hazardous foods must be hot held at a temperature of above 135F. The manager was able to adjust the temperature to a higher setting. 15 minutes later I observed that the internal temperature of the pesto pasta was 135F. |

Observed no staff member designated as a certified food protection manager (CFPM). Deli manager explained the a previous staff member had a CFPM but is no longer working at the deli. Deli manager was aware they are required to have a member involved in the daily operation of the establishment to have a CFPM. They stated they can register for a class with in 10 days. |

Observed handwashing sink in the deli kitchen blocked by gallon jugs of oil and a rack used to store breads. I discussed the sink must be accessible and allow handwashing to take place, to prevent the spread of germs. Deli manager immediately removed the food rack and oil jugs to allow access of the sink. |
