Potentially hazardous foods must be kept below 41F to reduce the risk of bacterial growth and contamination. Person in charge voluntarily discarded the food items and turned the prep cooler down. Person in charge will keep a cooler log for the prep cooler every day for the next two weeks and will send it to nancy.mcwilliams@alaska.gov by 4/5/2024. |
Inspector Comments | There was no designated handwashing sink in the warewashing and food preparation area. Employees washed their hands in the middle compartment of the 3-compartment warewashing sink. It is required to have a designated handwashing sink in the warewashing and food preparation areas to keep handwashing accessible at all times. Person in charge will work with EHO McWilliams on either a variance request or will install a hand sink in the food preparation area. |
Inspector Comments | A bowl and fork used to scramble eggs were washed with just soap and water and not sanitized. Dishes must be sanitized after washed with soap and rinsed to ensure there is no potential contamination when they are used again. Person in charge added chlorine sanitizer to a sink and sanitized the dishes. Person in charge will get chlorine test strips and keep one compartment filled with sanitizer anytime dishes are being done. |
Inspector Comments | The consumer advisory on the menu only had a reminder of the risks of consuming raw foods, but no disclosure informing customers what menu items may be served raw. Person in charge will update the menus or put a sign to disclose which menu items are at risk of being served raw or undercooked. Inspector Comments | The facility offers eggs and hamburgers to be cooked to order but lacks a consumer advisory. Consumers should be informed of the significantly increased risk of consuming raw or undercooked animal products. The PIC will include a reminder and disclosure on the menu or create table tents or placards. The reminder should include "Consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs may increase your risk of foodborne illness". The PIC will send the updated menu with the consumer advisory to lizzy.buckingham@alaska.gov by 3/25/19. |
Inspector Comments | Food items were observed sitting on the counter and were above 41F. Ham was observed at 70.1F and sausage was observed at 66.2F. The rate of bacterial growth and possible toxin production can be greatly reduced when foods are held at temperatures of less than 41F. The foods were voluntarily discarded by staff at time of inspection. Staff will keep foods on ice if leaving outside of refrigeration. |
Inspector Comments | A staff member was observed handling raw eggs and then was changing tasks to handle ready-to-eat foods. Good hygienic practices must be followed by all food workers to prevent the introduction of contaminants into food and to prevent the possibility of transmission of disease through food. The staff member immediately washed their hands and changed gloves. PIC will re-train all employees on when and how to wash hands, and the importance of washing hands. |
Inspector Comments | Five employees did not have food worker cards. Food workers who are knowledgeable in food safety are more likely to follow food safety and sanitation best practices. Please visit http://dec.alaska.gov/eh/fss/Training.html to obtain training and to take the Food Worker Card test. The Person in Charge (PIC) will ensure that all of these employees obtain the proper food worker cards by 3/18/19 and will email copies to lizzy.buckingham@alaska.gov. |
Inspector Comments | The chlorine sanitizing solution was verified to be above 200ppm with the appropriate test strips. Failure to use sanitizing solution at the proper concentrations could result in injury to employees and the consumer and the accidental contamination of food or food-contact surfaces can cause serious illness. The sanitizing solution was remade and verified to be at 100ppm with the appropriate test strips. PIC will re-train all employees on how to make sanitizing solution at the appropriate concentration of 50 to 100 ppm for chlorine. Buying appropriate test strips to test the sanitizing solution will verify that the solution is at the correct concentration. |

The PIC will provide a consumer advisory either on the menu, on a table tent on each table, and/or at the front where orders are placed and paid for by consumers. |
Inspector Comments | Food items in cold-holding were observed to be above 41F including cooked tempura chicken (54F), cooked sausage links (67F), diced reindeer sausage (65F), and diced ham (65F). The rate of bacterial growth and possible toxin production can be greatly reduced when foods are held at temperatures of less than 41F. The PIC voluntarily discarded these food items. These food items are often taken in and out of the cooler during busy times making it difficult to maintain a temperature of 41F or below. The PIC stated that these items will be held in a container of ice during busy times and placed back in the cooler when the rush slows down to maintain proper cold-holding temperatures. |
Inspector Comments | Chlorine sanitizing solution was verified to be at 200ppm using test strips. Failure to use sanitizers at the proper concentrations could result in injury to employees and the consumer. Chlorine sanitizers need to be between 50-100ppm to be safe and adequate for food-contact surfaces. The head cook created a new chlorine sanitizing solution that was verified to be at 50ppm using test strips. The PIC will ensure that all food employees know how to create a chlorine sanitizing solution that is safe and adequate for food-contact surfaces and will acquire the appropriate test strips to verify the concentration. |
