Sanitization buckets were registering low on Ammonia. Low sanitizer can lead to surfaces not being cleaned and sanitized properly. Employees made up a new bucket of Sanitizing solution which also came up short. Employee changed out mixture bucket and prepared a new bucket. Advised them to check periodically, as they use a pre mix system, to make sure the concentration is correct. |

Food employee was observed entering kitchen and cooking before washing hands. Person in charge insured that food emplpoyee washed hands and returned to work. Person in charge will educate employees on the importance of hand washing and will ensure that all food employees are following proper hand washing procedures at all times. |

Sanitizing solution in buckets and in 3 compartment were observed to read 0 PPM of Quat solution. Person in charge (PIC) remixed solution that measured at 200 PPM of quat sanitizing solution. PIC will ensure that employees are educated on the proper procedure to mix quat sanitizing solution and that proper sanitizing chemical concentration exists at all times. |
