| Inspector Comments | Creamer stored in white Kenmore refrigerator was 52.3F. Potentially hazardous foods should be stored at a temperature of 41F or lower to prevent the growth of pathogenic bacteria. Person in charge voluntarily discarded the creamers and moved potentially hazardous foods that had been placed in the cooler within the last hour to other coolers. Person in charge will not store any potentially hazardous foods in the Kenmore refrigerator until it can hold temperatures 41F or below. Person in charge will also keep a daily temperature log to monitor its temperature for the future. |

| Inspector Comments | A carton of raw shell eggs was observed stored above ready to eat (RTE) foods items including syrups used for drinks. Salmonella enteritidis may be inside perfectly normal-appearing eggs and can cause serious illness if the eggs break or crack and drip on RTE foods. A food worker moved the eggs to the bottom shelf. The person in charge (PIC) will train all food employees on proper food storage and protection to prevent potential cross contamination. |
| Inspector Comments | Food items in the top part of the True prep cooler for cold storage were observed to be above 41F including pre-cooked egg patties (42.7 - 47.3F), sausage patties (48.2F), and sliced ham (51.8F). A packet of reduced oxygen packed (ROP) smoked salmon was observed to be in cold-holding with an internal temperatures of 47.8F in the bottom part of the True prep cooler. The rate of bacterial growth and possible toxin production can be greatly reduced when foods are held at temperatures of less than 41F. A food employee voluntarily discarded these food items. The PIC lowered the temperature of the cooler and will place a thermometer in the cooler to monitor that the unit is maintaining temperatures of 41F or below. |
| Inspector Comments | The handwashing sink did not have soap available. Hand cleaner must always be present to aid in reducing microorganisms and particulate matter found on hands. The person in charge (PIC) supplied the sink with soap and will ensure that it is always supplied with soap and paper towels. |
