An advisory must be added to the menu as well as a reminder which states which products the advisory applies to in order to ensure the consumer is aware of the added risk. Example language: “Consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs may increase your risk of foodborne illness.” The person in charge agreed to add this to the menu as soon as possible. |

The rate of bacterial growth and possible toxin production can be greatly reduced when foods are held at temperatures of less than 41F. The person in charge (PIC) discarded all food items on this bottom shelf of the cooler including 10 Hot Pockets, 5 Landshire sandwiches, 3 Pierre sandwiches, and 7 Big AZ sandwiches. The PIC placed a thermometer in the bottom shelf, lowered the temperature of the cooler, and will monitor the temperature to ensure that foods are held at 41F. |
