Hand sinks need to always be supplied with soap and paper towels to ensure employees can properly wash their hands and prevent food contamination. Person in charge replaced paper towels at the sink. Person in charge will check towels and soap levels daily to ensure they are always stocked while food is being prepared.

Potentially hazardous foods must be kept at temperatures below 41F during storage to prevent contamination from the growth of harmful bacteria. Person in charge voluntarily discarded all potentially hazardous foods found in the cooler. Inspector Comments There is no certified food protection manager (CFPM) on staff. A person who is immediately available and knowledgeable in operational and Code requirements is needed to establish an important barrier to food contamination. The person in charge (PIC) stated that the or another employee will be attending a class in October to obtain CFPM.
Inspector Comments Raw shell eggs were stored above ready to eat (RTE) foods including cooked pasta and sliced cheese. Salmonella enteritidis may be inside perfectly normal-appearing eggs and can cause serious illness if the eggs break or crack and drip on RTE foods. The PIC immediately moved the eggs to the bottom shelf. The PIC will train all food employees on proper food storage and protection to prevent potential cross contamination.
