I saw that there was cut lettuce, cooked chicken and cut tomatoes stored in the top portion of a deli prep cooler. This deli prep cooler was in need of repair from previous inspection. Cut lettuce internal temperature: 44F Cooked Chicken internal temperature:45F Cut tomatoes internal temperature: 44F. Person in charge (PIC) stated that some one did come out yesterday and made repairs to the cooler. PIC understood that the cooler was still not operating properly. They stated that these foods had been stored in cooler since 10:00 AM today. I explained that potentially hazardous foods must be cold held at temperatures of 41F or below to prevent the growth of germs that may lead to food borne illnesses. PIC volunteered to immediately throw the potentially hazardous foods out. They also stated they will not let any more food be stored in this deli cooler until it is fixed or replaced with a new refrigerator. PIC also made room in the stand up refrigerator to allow storage for future salad toppings. Owner stated via phone call that they will replace the deli cooler with a new refrigerator by 04/09/22 and will notify me when installation is complete. |

Owner stated that the deli prep table will have repairs done by next week. Observed internal food temperatures slightly above 41F. Kitchen staff stated that foods were stored in deli prep table 2 hours before inspection. I explained to operator that potentially hazardous foods (PHF) must be cold held at 41F or below to prevent microbial parthenogenic growth. Staff member volunteered to move phf's in stand up refrigerator till deli table can have repairs completed. |

I observed that the chemically sanitizing dish washer used to wash bar utensils and glasses was not properly sanitizing dish ware. Chlorine level was less than 25PPM. Discussed with person in charge that chlorine level must be 50-100 PPM in order to effectively sanitize dishware in order to destroy microbial pathogens that may lead to food borne illnesses. I recommended that bar personnel bring dishware back to that kitchen dishwasher to be washed, rinsed, and sanitized. Manager stated that it may take a few weeks to get a technician to repair dishwasher. |
