Person-In-Charge (PIC) will keep containers close by to hold utensils that are in use and prevent them from being laid on non food-contact surfaces.

Inspector Comments Chlorine sanitizing solution was verified to be over 200ppm using test strips. Failure to use sanitizers at the proper concentrations could result in injury to employees and the consumer. Chlorine sanitizers need to be between 50-100ppm to be safe and adequate for food-contact surfaces. The manager poured out the sanitizer that was over 200ppm and created a new chlorine sanitizing solution that was verified to be at 100ppm using test strips. The PIC will ensure that all food employees know how to create a chlorine sanitizing solution that is safe and adequate for food-contact surfaces and it was discussed about posting the proper sanitation range of 50-100ppm on the wall and/or sanitizer containers.

Salmonella enteritidis may be inside perfectly normal-appearing eggs and can cause serious illness if the eggs break or crack and drop on RTE foods. The eggs were immediately moved to the bottom shelf of the unit. The PIC will train all food employees on proper food storage and protection to prevent potential cross contamination.
