Several potentially hazardous food items were found with internal temperatures of 50F inside the walk in cooler. Potentially hazardous foods that are kept out of temperature control will grow pathogens that can cause foodborne illness. The person in charge removed and discarded the foods and contacted a repair service. Employees will be further trained to monitor the temperatures inside the walk in cooler by checking the available thermometers and recording the temperatures in logs which will be provided. Copies of the logs must be emailed to shannon.jester@alaska.gov. |

There is no Certified Food Protection Manager (CFPM) available for this facility. Having CFPM training is required for knowledge of proper food safety practices and to provide other employees training as well. The person in charge has signed up for a class on 6/23/23. Please send copy of the certificate to shannon.jester@alaska.gov once it is available. |

Raw, in-shell eggs were stored above cooked potentially hazardous foods (PHF). It is important that raw foods be stored below cooked PHF and that the correct lid or cover be used to prevent contamination. The PHF was discarded due to temperature abuse. In the future, PIC stated he will use the correct lid or cover with foil/plastic wrap and eggs will be placed on a lower rack not above any PHF. |

The walk-in cooler temperature was above 50 degrees F. It is important to maintain a temperature of 41 degrees or less for potentially hazardous foods (PHF) to deter bacterial growth. The walk-in cooler was getting repaired at the time of inspection. PIC stated they will keep a log of the walk-in cooler temperature (guidance attached) and call for maintenance sooner if needed. |

PIC could not produce Food Worker Cards (FWC) for any employee. It is important that workers have this certification to prove training and competency. The Person in Charge (PIC stated employees would obtain their cards immediately. The cards will be kept on site and held for one year past the worker's termination date. |

Both soda dispensing and horchata dispensing nozzles and backsplashes are covered with old product. It is important to keep these machines clean to prevent accumulation of soil or mold. The machine will be wiped down daily and staff will be trained in removing dispenser nozzles which will be cleaned daily. |

The sanibuckets for the kitchen area and the waitstaff area were well above 200 PPM. This is a toxic level and contaminated food contact surfaces. The PIC cleaned and refilled the sanibuckets to safe levels. PIC stated he will train staff to ensure safe levels in the future. PIC stated he will also obtain chlorine test strips. |

Meat was observed hot holding on the stove at 120F. It is important that potentially hazardous foods are held at 135F or above in order to prevent the growth of hazardous bacteria. Time as a control may be used to hold food below 135F if a disposal time is marked or logged. Please keep the meat at a higher temperature or mark it with a discard time that is 4 hours past its cooking time. |

The manager is out of town at the moment and it is unknown if they have a Certified Food Protection Manager certificate since one is not present on site. It is important that the certificate is kept on site in order to verify that all employees are properly educated on food handling. The person in charge agreed to find out if the manager has a certificate and keep a copy on site if they do. |

The ice scoop was observed sitting on top of the ice machine where dust was accumulating and grease buildup was observed on the containers used to hold taco shells and tortilla chips. It is important that all food contact surfaces are kept clean and are sanitized regularly in order to prevent the growth of harmful bacteria. The person in charge stated that they are in the process of degreasing all of the storage containers and agreed to continue to clean and sanitize them. The scoop should be kept in a container that can be easily cleaned or hung somewhere to avoid contamination. |

The Pepsi fridge was observed cold holding salsa and sour cream at 47F. The rate of bacterial growth and possible toxin production can be greatly reduced when foods are held at temperatures of less than 41F. The person in charge moved the potentially hazardous food items to the walk in cooler. The person in charge agreed to contact a service company to repair the fridge to ensure it is cold holding at 41F or below. Until the fridge can be repaired all food items will be stored in the walk in cooler. |

The can opener and meat slicer were both observed encrusted in food debris. Accumulated food debris on the food contact surfaces can harbor pathogenic bacteria which may lead to contamination of food that comes in contact with it. The person in charge washed, rinsed and sanitized the can opener and slicer and agreed to train staff to clean them after each use. |
