Inspector Comments Facility does not have an appointed certified food protection manager. Person in charge stated they will be able to register and attend a CFPMC course in Sitka, AK on 03/30-03/31. EHO sent operator course information.
Inspector Comments Operator stated that not all employees have obtained a Food worker card. Discussed food worker card in mandatory in the state of Alaska when preparing, cooking foods, as as dishwashing. Operator stated they can have all employees obtain food worker cards by 03/10/22. EHO sent information on how to obtain FWC.
Inspector Comments At the time of inspection operator did not sanitizer mixed. Operator also did not have test strip in supply and was not able to test pH yield of chlorine/water mixture for 3-compartment sink. Discussed if too little or too much pH concentration of chlorine can be ineffective at reducing or destroying harmful pathogens. Too much chlorine can leave residue on utensils and dishware and may contaminate food. Operator agreed to order chlorine test strips after inspection. Discussed chlorine sanitizer mix process.
Inspector Comments Observed both handwashing stations stocked with hand soap and paper towels however paper towels were not contained in hands free dispenser. Discussed the possibility of cross contamination by having to hand towel rolls after washing. Papers towels not in dispensers can reduces convenient accessibility. Operator placed paper towels in dispensers.
