| Inspector Comments | The highest temperature that the mechanical ware washing machine reached was 139F. It is important that the surface temperature of the utensils reaches 160F to ensure that the ware washing machine is sanitizing properly. I discussed hot water boosters with the operators and they agreed to discontinue use until it is repaired. They have a chemical sanitizing ware washing machine in the kitchen of the attached restaurant and will be using it to sanitize bar glassware in the meantime. They also have a plate thermometer to monitor the temperature. Please provide a follow-up report to erica.aus@alaska.gov by 12/28/21. |

One live roach and several dead roaches were observed during the inspection. The person in charge agreed to perform a deep cleaning throughout the kitchen to remove the roach food sources. A follow-up inspection will be performed to assess progress. |

Potentially hazardous foods must be kept at 41F or colder when refrigerated to prevent the growth of pathogenic bacteria which can cause foodborne illness. The roast beef was voluntarily discarded and the cheese stored in this cooler was moved to a different unit to ensure it will be kept at a proper temperature. The unit will be serviced by a professional within the next week and a follow-up inspection will occur to ensure the unit is working properly. |
