Chlorine Sani buckets were observed <200 PPM, this can lead to Chlorine residue being present on surfaces and utensils wiped down with them. Operator corrected the sani buckets to 100 ppm. Operator has test strips, I advised these get used regularly to help avoid incorrect ratios. |

This facility has a certificate, but it is not an ANSI certified. The operator was informed that they would need an ANSI certified program. The operator stated they are in the process of getting into the next Servsafe course. I have requested the operator keep DEC informed of acceptance to the class and successful completion of the course. This can be emailed to holden.fleming@alaska.gov |

1 employee present during this inspection does not have a food worker card. Lack of proper food safety training can contribute to risk factor violations which may lead to food borne illness. The person in charge agreed to have this employee obtain a valid food worker card and submit a copy of the food worker card to jessica.paul@alaska.gov within 30 days by 05/03/2019. |

The can opener was observed heavily encrusted in food debris. Accumulated food debris on the food contact surface can harbor pathogenic bacteria which may lead to contamination of food that comes in contact with it. The person in charge washed, rinsed, and sanitized the can opener in the 3 compartment sink and agreed to train employees to clean it after each use. |
