Inspector Comments | There is no food protection manager certificate holder on-site. There must be at least one employee with a current food manager certificate to ensure a thorough understanding of food safety principles in a food service. The person in charge agreed to register for the test in the next two weeks. Confirmation of this registration can be sent to me at nathan.maxwell@alaska.gov. Please visit https://dec.alaska.gov/eh/fss/food/food-establishment-requirements/cfpm-training/ to obtain a list of trainers throughout the State. |

Inspector Comments | An employee was observed preparing a burger assembly with bare hands. Preventing bare hand contact with ready to eat foods lessens the chance of spreading foodborne illness. The onions which were touched with bare hands were discarded and the employee donned a pair of clean disposable gloves. The person in charge agreed to remind staff of when to use disposable gloves while preparing food and when handwashing is necessary. |

Inspector Comments | The can opener was encrusted in food debris. Pathogens can be transferred to food from utensils that have not been properly cleaned and sanitized. Person in Charge (PIC) took the can opener to the dish pit and agreed to retrain employees to wash, rinse and sanitize the can opener after each use or every 4hrs. |
Inspector Comments | The floor in the outside cooking area is down to the sub-floor that is full of grease, black and dirty. The floor cannot be properly cleaned. This area has had a few fires from all the grease buildup. PIC agreed to deep clean this area and replace the flooring in the next month. Both handwash sinks have exposed wood making it not easily cleanable. Black mold is also growing behind the handwash sink in the inside kitchen. PIC agreed to repair the area and/or paint the wood around the sinks or replace with a new counter top. |
