Raw eggs were observed stored over cabbage in the 2-door refrigerator by the counter. Eggs may contain Salmonella. If the eggs crack and drip onto ready-to-eat food, they could contaminate it. Because there is no cook or pathogen kill step with ready-to-eat foods, the contaminated food could make someone ill. Owners immediately moved the eggs to store below the cabbage. They would make sure raw food was always stored under ready-to-eat food in the future. |

The bucket of chlorine sanitizer was observed at over 200ppm. The sanitizer should be 50-100ppm to ensure proper sanitizing. Failure to use sanitizers at the proper concentrations could result in injury to employees and the consumer. Owner immediately remade the sanitizer solution and verified the concentration with a test strip. She showed employees how to make the sanitizer at the proper concentration. |

Salmonella enteritis may be inside perfectly normal-appearing eggs and can cause serious illness if the eggs crack or break and drip onto ready-to-eat foods. Owner moved eggs to store below all ready-to-eat food and would make sure they were stored that way in the future. |
