Inspector Comments |
This facility offers some food items that may be undercooked by request from guests, for example eggs and steaks. There is not a consumer advisory posted at the point of selection informing the guests that eating undercooked food may increase their risk of foodborne illness. I provided a handout on consumer advisories. Chef discussed putting a consumer advisory placard on the tables on the days that undercooked food is offered. |

On occasion, this facility has used sport caught fish in their dinner preparation. Fish, served in a food establishment must come from an approved commercial processor. The source of food is important to ensure all products are safe for human consumption and manufactured in accordance with food safety and sanitation regulations. Sport-caught seafood may be used in a specific capacity, it must be (A) obtained from the individual who caught the seafood; (B) for preparation and service only to that individual; and (C ) processed separately from other preparation or processing by location or time. The facility will no longer offer fish that has been sport caught, unless it falls under the specific exemption listed above. All fish will come from an approved source in the future. |

Inspector Comments |
The eggs in the refrigerator were improperly stored above ready-to-eat foods. Salmonella enteritis may be inside perfectly normal-appearing eggs and can cause serious illness if the eggs crack or break and drip onto ready-to-eat foods. Chef immediately moved eggs to store below all ready-to-eat foods, and will make sure they are stored that way in the future. |
