Inspector Comments | The person in charge explained the dishwashing procedure to me as soaking, washing, and then rinsing. They use a cleaner + bleach chemical to soak the dishes before washing them with detergent. Dishes must go through the three-compartment sink as follows: wash, rinse, sanitize. Sanitizing must be done with either quat or chlorine sanitizer and dishes must be left to air dry after this step. Th person in charge agreed to purchase a container of classic bleach and use this in buckets, spray bottles, and the three-compartment sink for sanitizing. |
