The manager's Certified Food Protection Manager (CFPM) certificate expired four months ago. A CFPM establishes policies and procedures, and trains staff, on methodologies to prevent foodborne illnesses. Please visit the FSS webpage at: http://www.dec.alaska.gov/eh/fss/CFPM_training.html to obtain information on training and trainers throughout the state. Food worker staff employed for longer than 30 days do not have a valid Food Worker Card as required. Staff demonstrated adequate knowledge during the inspection. Information on how to obtain a food worker card was provided at the time of inspection. The wash cloth bucket sanitizer solution tested at 0 ppm. Too little sanitizer solution will not reduce microbes. Staff remade the solution to 100 ppm and established a consistent mixture of bleach to water. Test strips are available. As a reminder, please use test strips each day when making the solution. As a reminder, wash cloths are to be replaced daily and the microwave is to be wiped down daily. |
