Food was observed cold holding at temperatures above 41F. Food items in the make line were observed to be above 41F. The rate of bacterial growth and possible toxin production can be greatly reduced when foods are held at temperatures of less than 41F. Because the food does not stay in this unit for an extended period of time and constantly being emptied by the cook the food has not been discarded, however person in charge (PIC) will not store food in this unit at night until it has been repaired. PIC was reminded to keep the lid on the unit closed when not in use to help hold the cold temperatures within the unit. The refrigerating unit was adjusted to a lower a temperature and the PIC has contacted a maintenance company to work on the unit. PIC will email a copy of the invoice that the unit has been repaired. |

Quat sanitizer buckets were at 500ppm+. Improperly applied sanitizer presents health rise to employees and consumers. Person in charge (PIC) is adding water to dilute sanitizer and verifying with test strips that concentration is between 200-400ppm per manufacturer's instructions. Management will call ECOlab to adjust sanitizer to proper concentration and will send the DEC Wasilla office confirmation of corrected sanitizer levels. EPA - Reg No. 1677-198 |
