Inspector Comments When taking temperatures on food, one fridge under a prep line was sitting above 41 degrees. Items that had been prepared earlier (>1 hour) had been placed in the fridge. The PIC noted that the thermometer was high. If food is left in an environment above 41 degrees foodborne illness will begin to grow. PIC turned the unit's internal temp down, and moved the items still cooling to another, colder and more spacious, fridge. Long term PIC will monitor the thermometer better and utilize the additional cooling space available to them.
Inspector Comments When testing sanitization buckets the concentration of Chlorine (bleach) was above 200 ppm. Above 200 PPM can leave residue that is potentially hazardous to consumers. Had PIC increase water levels in the bucket to bring the PPM to within acceptable thresholds. Long term I have suggested PIC get Chlorine test stirps as the PIC is currently using the incorrect kind of test strips with the sanitizer they have. 196575.195IB
