Inspector Comments Only some of the food worker cards were available for review at the time of the inspection. It is required for any food worker within 30 days of hire to obtain a food worker card and for the establishment to keep the card on file while while employed. Person in charge will send copies of the valid food worker cards to nancy.mcwilliams@alaska.gov by 7/12/2024. Person in charge will ensure food worker cards are on file for the future.
Inspector Comments In both the walk in coolers for salad and sandwich prep ingredients, there were potentially hazardous foods with temperatures above 41F (egg salad (44), pastrami (44), shredded chicken (44)). Also in the Randall sandwich prep cooler, the provolone (47) and another sliced cheese (48) had temperatures above 41F. Potentially hazardous foods must be kept at temperatures 41F or below to prevent the growth of pathogenic bacteria. Person in charge voluntarily discarded the egg salad and pastrami from WIC 2, moved the items in WIC 1 that were near the cooling chicken racks, and moved items to lower shelves of the walk in coolers to allow for better air flow. Person in charge turned down temperature of Hoshizaki cooler. Person in charge also instructed employees to have the Provolone and other sliced cheese in the Randall Cooler discarded after the 4 hours. Person in charge will complete cooler logs using internal food temperatures for both walk in coolers, the left sandwich prep cooler, and the Hoshizaki cooler. Person in charge will send this log to nancy.mcwilliams@alaska.gov by 7/12/2024. Person in charge will complete time as public health control documents and logs if the Randall cooler cannot keep food items below 41F during service and send a copy to EHO McWilliams.
