Inspector Comments | I observed foods being hot held with temperatures below 135 degrees F. It is important to keep hot held food above 135 degrees F to prevent the formation of bacteria. I asked staff to reheat low temperature foods to 165 degrees F before putting on display for consumption. There was no person in charge to counsel staff. |
Inspector Comments | I observed that foods in the hot display case were not stamped with the time/date of transfer to display case. Additionally, the staff do not use a log to track time/date. It is important to know when food was cooked so it can be discarded after 4 hours. I explained the situation with the person in charge by phone and she said food generally sells within 2 hours of being put on display. I told her she needs to mark foods and/or keep a log. I have attached a log for use. Please keep track and send 10 days' information to shannon.jester@alaska.gov. |

Inspector Comments | The handwashing sinks in the bakery/deli area were observed without paper towels and one handwashing sink lacked soap. the handwashing sinks were not supplied with hot water. It is important that handwashing sinks are supplied with soap, towels, and hot water in order to encourage frequent and proper handwashing. The person in charge agreed to stock the handwashing sinks and repair the hot water. if this cannot be done by the recheck on Friday, please send photos of the corrections to allison.brooking@alaska.gov. |

Inspector Comments | Employees stated that they wash their hands in the three compartment sink. It is important that hands are washed in a specified sink, especially in a department handling raw meat, to avoid cross contamination of hands, utensils, and food products. The sink situation was discussed with the employees and the person in charge agreed to check that all sinks are functional and instruct employees to use them appropriately. |
Inspector Comments | Spray bottles are used to sanitize equipment that needs to be cleaned in place. One of these bottles was observed with a quat concentration of over 400ppm. It is important that quat sanitizer is kept at a concentration of 200-400ppm in order to effectively destroy bacteria but remain non toxic to humans. Please remake the sanitizer bottles and test them with test strips every time they are made. |
Inspector Comments | The handwashing sink was blocked by a cart and a chair and the water was not turned on. It is important that a handwashing sink is accessible at all times to encourage frequent and proper handwashing. The sink also had some cleaning supplies stored in it. It is important that handwashing sinks are used only for handwashing to prevent cross contamination. The water was turned on and the cleaning items were removed from the sink. Please instruct employees tokeep the sink clear and only wash hands in this sink. |
