Inspector Comments Raw shell eggs were observed being held above fresh fruits and vegetables intended to be consumed raw. Keeping raw meat products separated from ready to eat products prevents cross contamination. Manager moved the eggs to a different fridge unit. Manager will train staff on proper fridge stacking.
Inspector Comments Shepherds pie was observed being held in a deep plastic bin with a tight fitting lid. Item temped at 45.3 after being in the fridge over night. Proper cooling of potentially hazardous foods inhibits the growth of pathogens. Manager immediately discarded product and will train staff on proper cooling procedure. Facility has both ice paddles and probing thermometers.
