Inspector Comments | I observed that several items that were left over from breakfast service that had not been cooled properly. Specifically, scrambled eggs were 45F and corned beef hash was 71F. The items had been in the cooler for approximately 12 hours. Excessive time for cooling potentially hazardous foods has been consistently identified as one of the leading contributing factors to foodborne illness. I discussed my observations with the PIC who discarded the items. I provided cooling logs and recommended using them. |
Inspector Comments | I observed that there was not a food manager employed at the galley. It is important that one person involved in the daily operations has the more advanced food safety training that the food manager's certification provides. I discussed my observations with the Person In Charge (PIC) was working towards their food manager certification. Please send a copy of the certificate to erica.aus@alaska.gov by 8/31/2023. |
