A knife was found on the magnetic strip that holds the clean knifes encrusted with debris. Pathogens can be transferred to food from utensils that have been stored on surfaces which have not been properly cleaned and sanitized. Person in charge (PIC) immediately took the knife and washed, rinsed, sanitized the knife before replacing back on the magnetic strip. |

The chlorine sanitizing solution was verified to be above 200ppm with the appropriate test strips. Failure to use sanitizing solution at the proper concentrations could result in injury to employees and the consumer and the accidental contamination of food or food-contact surfaces can cause serious illness. The sanitizing solution was remade and verified to be at 100ppm with the appropriate test strips. PIC was reminded to always test the solution after it has been made to verify it was at the correct concentration. |

Two unlabeled chemical spray bottles were observed. This can be dangerous to employees not knowing what is being stored in such bottles. Having a distinct label helps ensure that poisonous and toxic materials including personal care items are properly used. The person in charge (PIC) immediately dumped any unfamiliar chemicals and labeled the the bottles that they knew what chemicals were contained in it. |

The menu does not have an advisory at the point of selection to advise of additional risk of foodborne illness when consuming raw or undercooked meats. The person in charge agreed to add this to the menu as soon as possible. Example language: “Consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs may increase your risk of foodborne illness, especially if you have certain medical conditions.” |

The chemical-sanitizing dish machine was observed to be not dispensing any chlorine sanitizer during its wash cycle. Dishes must be washed, rinsed, and sanitized to protect against foodborne pathogens. The person in charge replaced the tubing on the sanitizer dispenser and the sanitizer was observed at 75 ppm thereafter. Sanitizer concentration will be monitored daily with test strips moving forward. |
