Inspector Comments I observed that the refrigerator and freezer were not operating at the time of inspection. It is important that cold foods be held at a temperature of 41 degrees F or colder to discourage bacterial growth. Person in charge stated he would be sending pictures of refrigerator temperatures and refrigerated food temperatures to shannon.jester@alaska.gov.
Inspector Comments The Certified Food Protection Manager (CFPM) certificate wasn't able to be accessed during the inspection. It's important to have CFPM certificates available on site for verification to ensure there is a CFPM on staff to promote safe food handling practices in the facility. The person in charge (PIC) agreed to send copies of employee FWCs and CFPM to shannon.jester@alaska.gov.

Inspector Comments At the time of inspection I did not observe a correctly assembled sanitizing water in the sink due to lack of water. It is important that dishes be properly sanitized to deter the growth of bacteria. Person in charge stated he would purchase more quaternary ammonium and test strips to prove the adequacy of his sanitization solution.
