Inspector Comments Staff plated microgreens using bare hands. Because hands can be a major source of food contamination, bare-hand contact with ready-to-eat foods is not allowed. Staff discarded the microgreens. I trained staff during the inspection to wear gloves or tongs and staff translated information to train others.
Inspector Comments Food worker staff employed for longer than 30 days do not have a valid Food Worker Card as required. Food worker cards demonstrate staff have basic knowledge with food handling and sanitation practices to prevent foodborne illnesses. Information on how to obtain a food worker card was provided at the time of inspection. Inspector Comments A consumer advisory consists of both an asterisk used to identify the food item that may be served raw or undercooked and a disclosure footnote, with the same symbol, identifying the risks. The eggs, salmon, steak and oysters were not identified with an asterisk on the menu informing the consumer that the food may contain raw or undercooked ingredients. As this increases the risk of foodborne illnesses, consumers are to be made aware if they request it. Staff will warn those requesting undercooked items of the risks verbally until the owner can update the menu. This is anticipated to be completed by September 13, 2021. Please email a copy or image of the updated menu to Becky.Fletcher@alaska.gov.
Inspector Comments Staff were observed plating cooked mushroom and onion mixture by using bare hands to remove them from the spoon. Using bare hands with ready to eat foods increases the risk of contamination and foodborne illnesses. Staff were trained not to use bare hands with foods. The food was discarded and staff were observed putting gloves on to plate food afterwards.
Inspector Comments The ice machine was observed with debris and a microbiological biofilm buildup. This may cause microbiological and debris contamination of ice. Staff decided to clean the ice machine that night and increase the cleaning schedule prior to an observable biofilm buildup. Please submit pictures of the cleaned ice machine to Becky.Fletcher@alaska.gov.
Inspector Comments One of the two hand washing sinks in the kitchen was not supplied with an operating automated hand soap dispenser. An operating handwashing station encourages timely and frequent handwashing, which reduces the risk of foodborne illnesses. The owner moved the soap to the closer handwashing sink until the batteries could be changed, which is to occur on September 10, 2021.
