Food contact surfaces were observed with a buildup of grease. Additionally, chlorine sanitizer was observed at 25ppm which is too low of a concentration to properly sanitize food contact surfaces. Sanitization is accomplished after the ware washing steps of cleaning and rinsing so that food contact surfaces are sanitized before coming into contact with food and before use. Pathogens can be transferred to food from utensils that have been stored on surfaces which have not been properly cleaned and sanitized. Owner remade sanitizer, additionally food staff are deep cleaning entire restaurant. Owner will make sure that all food contact surfaces are consistently washed, rinsed, and sanitized in the future. |

No one on staff has a Certified Food Protection Manager certificate. Having the CFPM training is a valuable tool for preventing food borne illness and training employees. Please obtain card within 30 days, handout with local instructors provided. Owner agreed to take class as soon as possible. Food in several of the refrigerators were observed holding at temperatures of above 41F. The rate of bacterial growth and possible toxin production can be greatly reduced when foods are held at temperatures of less than 41F. Owner immediately discarded food items. He will turn down refrigerators and monitor the temperature. He will not use them if they are unable to keep food at 41F or less. We also discussed purchasing new refrigerators as the current equipment may not be able to keep proper temperatures. Owner will make sure all refrigeration holds food at 41F or below in the future. |
