A refrigerator was observed to be holding foods at approximately 50F. Foods must be held at a maximum of 41F while under refrigeration to ensure the prevention of pathogenic bacterial growth. The only potentially hazardous food in this refrigerator was a turkey carcass, which was discarded voluntarily. The person in charge agreed to monitor this refrigerator's temperature closely moving forward. |

Potato chowder was observed at 48F in a large bin in a refrigerator. The person in charge informed that the chowder was cooked two days prior and had been cooling since. Salmon fillets were also observed in a deep plastic container in this refrigerator at 78F. Hot foods placed in deep containers with the lids on will not cool from 135-70F in two hours nor 70-41F in four hours, which is required to prevent the growth of pathogenic bacteria. The salmon was cooked approximately one hour earlier so it was placed on a baking sheet and put back under refrigeration to finish cooling. The chowder was voluntarily discarded. The person in charge agreed to use more shallow containers moving forward, as well as using ice as necessary when cooling foods. |

Bleach spray bottle was measured at 200+ppm. In order to properly sanitize food contact surfaces without leaving a toxic residue, chlorine sanitizer (bleach) must be used from 50-100ppm. Person in charge immediately remade the bottle to 100ppm and agreed to monitor concentrations more closely in the future. |
