Inspector Comments Several employees had their food worker cards expire within the last week. Please visit http://alaska.state.gegov.com/foodworker/ to obtain training and to take the Food Worker Card test. Manager agreed to have all employees up to date with current cards within one week.
Inspector Comments Country gravy was observed cooling in the walk-in cooler at 81.5F. This gravy had been cooling for at least two hours and was being stored in a very large container which would not promote quick cooling. The person in charge immediately reheated the gravy to 165F and began the cooling process again; this time on a bed of ice. This process will be followed in the future.

Inspector Comments The 3-compartment sink was set up as Wash, sanitize and then rinse. Proper set up for dishwashing is wash, rinse, and sanitizing. Food that comes into contact with surfaces that are not properly cleaned and sanitized are liable to contamination. PIC agreed to set up the sink properly and retrain staff on proper dishwashing procedures.
Inspector Comments The handwash sink located in the bar was not supplied with a working soap dispenser or paper towels. Convenient accessibility of a handwashing facility encourages timely handwashing which provides a break in the chain of contamination from hands to food or food contact surfaces. Person in Charge (PIC) agreed to keep the handwash sink supplied at all times to ensure proper handwashing is taking place.
Inspector Comments The bleach sanitizing bucket was 200ppm. Failure to use sanitizers at the proper concentrations could result in injury to employees and the consumer. PIC remade the bleach bucket to 100ppm and agreed to retrain employees on proper concentration.
