Inspector Comments Orange chicken (119F & 108.6F) and chicken melt (109F) had temperatures below 135F in the hot case. Potentially hazardous food needs to be hot held at temperature above 135F to prevent contamination from the growth of bacteria. Person in charge voluntarily disposed of chicken melt and informed staff when the orange chicken would need to be disposed. Person in charge will use time as temperature control procedures for the items in the hot case that are under 135F and will dispose of all food items after 4 hours until hot holding case has been repaired. Person in charge will send standard operating procedure document for the time as temperature control procedures and information on how the time will be tracked to nancy.mcwilliams@alaska.gov by 10/27/2023.
Inspector Comments Observed pans and utensils being washed and rinsed but not sanitized between uses. All food contact surfaces should be washed, rinsed, and then sanitized with a food safe sanitizer after coming into contact with potentially hazardous foods to prevent future contamination. Person in charge obtained bleach and trained employee on proper dishwashing. Person in charge will order test strips for sanitizer and will train all employees who dish wash on how to use the sanitizer.
