The meat slicer had a significant amount of food debris visible along the back of the blade. It is critical to thoroughly clean this machine after use as it has many areas where food debris will accumulate. If left unclean, pathogenic bacteria can grow on these surfaces and cause foodborne illness. The person in charge had the machine cleaned immediately and agreed to monitor its cleanliness closer moving forward. |

Staff were using sinks in the bathrooms to wash hands. The bathrooms are located near the kitchen but there must be a dedicated hand sink in the kitchen for handwashing purposes. The person in charge agreed to use the prep sink inside the kitchen as the hand sink moving forward. This prep sink is hardly used and can easily be converted to handwashing as its sole use moving forward. There are no menu items that would require the use of a prep sink. |

There is no consumer advisory present on the menu, even though steak and eggs can be ordered undercooked. There must be an advisory on the menu that reminds the customer of the increased risk of eating these foods. There must also be an indicator clearly showing to which menu items this statement applies. Example advisory: “Consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs may increase your risk of foodborne illness.” The person in charge agreed to get this advisory added to the menu by the end of the month. |
