Pizza slices in the pizza warmer were observed holding at temperatures below 135F. Slices on the middle rack were observed holding below 135F, but slices on the bottom rack were observed above 135F. Food that is held at a temperature of 135F or greater during hot holding is sufficient to prevent the growth of pathogens and is therefore an effective measure in the prevention of foodborne illness. The slices were put in the warmer at 12:00pm. Owner will make sure the slices are discarded by 4:00pm if any remain. We discussed that time, instead of temperature, could be used to control pathogen growth. Food can remain out of temperature for up to 4 hours, but then will need to be discarded. The facility would need to have a written procedure, and some way to mark when the food was taken out of temperature control and when to discard it. Owner will email me her procedure for using time as a control or will increase the temperature in the unit so that all food holds at 135F or above.
