Inspector Comments Mashed potatoes were observed at 119F after sitting out for little more than an hour. Food that is held at a temperature of 135F or greater during hot holding is sufficient to prevent the growth of pathogens and is therefore an effective measure in the prevention of foodborne illness. Because these food items are used for meals on wheels they have a potential for being left out for much longer periods of time and therefore could start to develop bacteria. Person in charge (PIC) immediately place them back in the oven to have them continue to remain on heat.
Inspector Comments The facility was observed using scented, no splash bleach which is not EPA regulated. Only approved bleach registered for application in food establishments may be applied. The PIC immediately stopped using the bleach and it was replaced with the correct type of bleach that is allowed to be used. PIC was reminded that all bleach bottles should contain a EPA # in order to be used.

Inspector Comments The facility just had a new dish machine installed. The dish heat sanitizing machine was at 156.9F. Food that comes into contact with surfaces that are not properly cleaned and sanitized are liable to contamination. The person-in-charge (PIC) agreed to re-sanitize all dishes and use the 3-compartment sink to wash, rinse and sanitize until the dish machine can be service.
Inspector Comments The 2 sanitizing bleach buckets were at 0ppm. Food that comes into contact with surfaces that are not properly cleaned and sanitized are liable to contamination. The PIC remade the sanitizing buckets to 100ppm and agreed to retrain employees to fill sanitizing buckets from the sanitizing sink to ensure all buckets are made to the proper concentration of 100ppm.
