Prep table cold holding unit was not holding food under 41, the ambient temperature observed was 50. The owner threw away all the potentially hazardous food. A repair person was called to make adjustments on the unit. The reach in cooler was cold holding at an ambient temperature of 43F, the owner threw away all Potentially Hazardous Food and called a repair man. I will do a follow up 10.17 to see if the reach in is working. Air flow seems to be restricted in one fan. |

Chicken in the reach in was observed at 50.8 in the center and 45.1 around the outer corners. The employee explained they cool the cooked food on the counter and then move it into the reach in after a couple hours. I discussed proper cooling techniques and provided a hand out. The chicken was discarded. |

There is no CFPM at the restaurant. The owner agreed to get certified in 45days. Having food worker training is a barrier to the spread of food borne illness. The owner does have a FWC. |

The bleach bucket at the counter was tested at over 300ppm residual bleach. I provided instruction on making bleach sanitizer at the correct levels. The owner will use test strips to make the bleach solution in the future. |
