Food items in three refrigerators were observed at temperatures above 41F. The rate of bacterial growth and possible toxin production can be greatly reduced when foods are held at temperatures of less than 41F. Person-in-charge immediately discarded food items, she turned down the refrigerators and would monitor the temperature to ensure that potentially hazardous food is always held at temperatures of 41F or below. She will email photos of the refrigerator thermometers to heidi.isernhagen@alaska.gov. |
