Inspector Comments The operation lacks a person with current food manager certificate. The certificate posted expired 4/27/22. Food safety knowledge to oversee the operation's food preparation is a key barrier to preventing contamination. Operator will contact CFPM exam proctor to enroll in the course. Operator or an employee will obtain a CFPM certificate and send a copy a copy of the invoice and scheduled date of the exam showing they are making progress in obtaining this certificate.
Inspector Comments The mechanical dish machine was observed not circulating the chlorine sanitizer while washing dishes. When testing the concertation of the chlorine solution it appeared at 0ppm. Pathogens can be transferred to food from utensils that have been stored on surfaces which have not been properly cleaned and sanitized. Person in charge (PIC) was told to immediately stop using the mechanical dish machine as a method of sanitizing and to make sure all dishes are dipped in a sanitizing solution and air dried prior to use.

Inspector Comments The bucket of sanitizer attached to the dish machine was observed to be empty during the inspection. Sanitizing dishes is a critical step in preventing the growth of bacterial pathogens which can lead to foodborne illness. As the facility did not have a backup bucket of sanitizer, the person in charge agreed to use the dish machine to wash dishes and set up a sanitizing compartment in the sink adjacent to the dish machine in order to sanitize dishes. This method will be used until a replacement bucket of sanitizer is hooked up to the dish machine.
Inspector Comments The back door of the kitchen is left open during operation without a screen to prevent insects from entering. The person in charge immediately shut the door and agreed to leave it shut until a screen is purchased to prevent insects from entering the kitchen.
