Employee washed hands, went to the prep line and grabbed slaw with bare hands that was then put onto a tortilla. This food item was a ready to eat food, meaning it would not receive further cooking. Employee was corrected and the soft shell taco was remade. Because food handlers can be a major source of food contamination, bare hand contact with ready to eat foods is not allowed. Manager agreed to retrain employees on bare hand contact. |

Chlorine sanitizing solution in the dishwasher cycle was 0 ppm using test strips. Food that comes into contact with surfaces that are not properly cleaned and sanitized are liable to contamination. The person in charge (PIC) created a new chlorine sanitizing solution that was verified to be at 50 ppm using test strips in the 3-compartment sink. PIC stated the machine was serviced and all chemical buckets replaced the Friday before this inspection occurred. The PIC will ensure that all food employees are trained to create a safe and adequate chlorine sanitizing solution: 1 teaspoon of chlorine to 1 gallon of water for a chlorine sanitizing solution between 50-100 ppm. The PIC will have the machine serviced and send documentation to EHO Hoskins the dishwasher is functional with a chlorine sanitizer reading between 50-100ppm. |
