Inspector Comments The quat sanitizer dispensed in the three compartment sink was observed at approximately 600ppm. The manufacturer's instructions recommend use of the sanitizer at 150-400ppm for food contact surfaces. The water on the dispenser is only coming out at a hot temperature, which may be causing the sanitizer puck to disintegrate at a higher rate, leading to a higher concentration in the solution. The person in charge had the sink filled with fresh cold water until the solution was approximately 350ppm. She will explain this to all dishwashers moving forward to ensure they follow this process and create a proper concentration of sanitizer in the sink moving forward. EPA Reg 5389-20
