| Inspector Comments | One of the two units that was not working in the inspection earlier today was still having issue holding temperatures. The person in charge agreed to move all foods out of this unit and into one of the other working units. Potentially hazardous foods that have been in the unit for an extended period of time were discarded. A refrigerator service person should be by to look at the unit in the next day or two. Until then potentially hazardous foods will not be stored in this unit. |

In this setting, the sausage would not have cooled in accordance with required parameters of 135-70F in two hours and 70-41F in an additional four hours. Foods that do not cool properly can harbor pathogenic bacterial growth and potentially cause foodborne illness. The person in charge relocated the sausage to a 2 inch pan and left it uncovered in the cooler to allow for more rapid cooling. Staff will be retrained on proper cooling procedures. |
